Smoothie pancakes

YOU NEED

  • Small handful of frozen berries (strawberries, blueberries, raspberries) (left to defrost only if you have time)

  • One ripe banana (the riper the sweeter they become)

  • Two tablespoons almond butter (or other smooth nut butter)

  • 50mls oat milk

  • 60mls extra virgin olive oil

  • 150g wholemeal flour

  • Heaped teaspoon baking powder

  • Extra virgin olive oil for cooking

TO SERVE

  • Full fat Greek yoghurt

  • Walnut (or other nut) crumb or baby granola

TO MAKE

  • Make your smoothie mix: add the berries, banana, nut butter, milk and oil to a food processor and blend until smooth

  • In a large bowl mix the flour and the baking powder

  • Gradually add the smoothie mix to the flour mix stirring as you go until you have a loose pancake batter consistency

  • Preheat a little oil in a pan on a medium high heat, when hot turn the heat down to medium and add the mix one spoon at a time. Leave for 2-3 mins then flip over and finish of for a min or two on the other side, then remove from the pan

  • Serve with full fat Greek yoghurt or a baby granola, and a drizzle of honey for the adults (and over 1s)
