Smoothie pancakes
YOU NEED
Small handful of frozen berries (strawberries, blueberries, raspberries) (left to defrost only if you have time)
One ripe banana (the riper the sweeter they become)
Two tablespoons almond butter (or other smooth nut butter)
50mls oat milk
60mls extra virgin olive oil
150g wholemeal flour
Heaped teaspoon baking powder
Extra virgin olive oil for cooking
TO SERVE
Full fat Greek yoghurt
Walnut (or other nut) crumb or baby granola
TO MAKE
Make your smoothie mix: add the berries, banana, nut butter, milk and oil to a food processor and blend until smooth
In a large bowl mix the flour and the baking powder
Gradually add the smoothie mix to the flour mix stirring as you go until you have a loose pancake batter consistency
Preheat a little oil in a pan on a medium high heat, when hot turn the heat down to medium and add the mix one spoon at a time. Leave for 2-3 mins then flip over and finish of for a min or two on the other side, then remove from the pan
Serve with full fat Greek yoghurt or a baby granola, and a drizzle of honey for the adults (and over 1s)
