Peanut pancakes

These super quick and easy to make pancakes are a great way to expose your little one to peanuts! Make these up on a weekend morning, and save a few in the fridge for breakfast or a snack over the next few days! They can also be frozen and defrosted the night before…

YOU WILL NEED

  • 1 ripe banana

  • 2 tablespoons of olive oil, extra for cooking

  • 2 tablespoons of smooth (runny) peanut butter

  • 120g wholemeal flour (or any other plain flour)

  • 1 teaspoon of baking powder

  • 170mls oat milk or another plant-based milk

To serve:

  • Full fat yoghurt or plant-based yoghurt like coconut or oat yoghurt to serve

  • Frozen defrosted raspberries pieces, mashed

  • Baby granola

  • Honey for over 1's

TO MAKE

  • Mash the banana using a fork in a mixing bowl then stir through the oil and peanut butter

  • Add the flour and baking powder to the banana and peanut mix, and stir to combine

  • Gradually add the milk stirring as you do until you have a nice runny consistency

  • Preheat a little oil in a pan on a medium high heat, when hot turn the heat down to medium and add the mix one spoon at a time. Leave for 2-3 mins then flip over and finish of for a min or two on the other side, then remove from the pan

  • Serve with a dollop of full fat yoghurt, the raspberries and a sprinkling of baby granola (and some honey for over 1's!)

Allergens: flour (wheat), peanut. If serving with baby granola- contains cashews (tree nuts), and yoghurt (milk)
